Hi there! This time I need your help. You might have noticed the link on the upper left corner (Medical Support for Africa). It is an organization created by the doctor who operated my husband in Bologna three years ago. They are helping a priest/doctor in Mozambico. Biscuits...
Too late for our "Open Day", but maybe you want to try them at home... here are the recipes (in Italian...) of some of MY biscuits. Hope they taste good!(try the recipes and bring the biscuits to school, I can give you good marks if they taste as they are supposed to!)

MARBLED BROWNIES
225gr. cioccolata fondente 4 uova
115 gr farina 1 bustina di vanillina
75 gr burro 350 gr zucchero
mezza bustina di lievito 115 gr noci
per l’impasto bianco:
50 gr burro 115 gr zucchero
175 gr mascarpone 2 uova
2 cucchiai di farina 1 bustina di vanillina
Sciogliere il cioccolato con il burro; nel frattempo sbattere le uova con lo zucchero e aggiungere la farina, il sale, il lievito. Aggiungere il cioccolato fuso, la vanillina e le noci. Tenere da parte 475 ml di impasto. In un’altra ciotola sbattere il burro con il mascarpone, aggiungere lo zucchero e le uova, la farina e la vanillina. Mettere l’impasto al cioccolato in una teglia imburrata rettangolare, versarci sopra l’impasto bianco e poi a cucchiai il rimanente cioccolato. Mescolare per dare l’effetto “marmorizzato”. Infornare a 180° per 35 minuti. Tagliare a quadrati e servire.
SCOTTISH SHORTBREAD
1 tazza e mezza di farina
un quarto di tazza di zucchero
125 gr di burro
un pizzico di essenza di vaniglia (facoltativo)
Riscaldare il forno a 150° e ungere la teglia. Sbattere il burro con lo zucchero e aggiungere la farina (si può fare con il mixer) in modo da ottenere un impasto morbido. Metterlo nella teglia e stenderlo (un cm di spessore); bucherellarlo con una forchetta. Infornare per circa un’ora, fino a quando diventa dorato. Quando è freddo tagliarlo nelle forme desiderate. Volendo si può modellare prima di cuocere.
APPLE SURPRISE
Due tazze e mezza di farina un cucchiaino di bicarbonato di sodio
Un pizzico di sale un cucchiaino di cannella
Una tazza e mezza di zucchero di canna 125 gr di burro (morbido)
un uovo un quarto di tazza di succo di mela
mezza tazza di noci una tazza di mela a pezzetti o grattugiata
una tazza di uvette (sminuzzate)
Riscaldare il forno a 200° e imburrare la teglia. In una terrina sbattere il burro con lo zucchero e aggiungere un po’ alla volta la farina a cui è stato mescolato il bicarbonato, il sale e la cannella. Aggiungere man mano anche il succo di mela. Alla fine aggiungere le noci, la mela e le uvette. Con il cucchiaio formare dei “biscotti” direttamente sulla teglie e infornare per 8-10 minuti.
COCONUT CHOCOLATE DROPS
125 gr di cioccolato fondente 2 tazze di cocco essiccato (farina)
3 cucchiai di farina 2 tazze (scarse) di latte condensato
un pizzico di sale e un po’ di vanillina
Sciogliere il cioccolato a pezzetti a bagnomaria. Aggiungere gli altri ingredienti. Riscaldare il forno a 180° e imburrare la teglia. Versare l’impasto a cucchiaiate per formare dei “biscotti”. Cucinare per un quarto d’ora.
OLD FASHIONED CHOCOLATE COOKIES
125 gr burro 1 tazza di zucchero
1 uovo 2 tazze di farina
mezzo cucchiaino di bicarbonato 60 gr di cioccolato fondente
mezza tazza di latte 1 tazza di zucchero di canna
un po’ di sale e vanillina
Setacciare la farina con il bicarbonato e il sale.Tagliare il burro a pezzi e metterlo in una pentola; farlo sciogliere con il cioccolato. Rimuovere dal fuoco e aggiungere lo zucchero. Aggiungere l’uovo e la vanillina al cioccolato caldo e mescolare bene. Aggiungere anche la farina e gradualmente il latte fino ad ottenere un impasto morbido. Riscaldare il forno a 180° e imburrare la teglia. Fare dei biscotti con il cucchiaio e far cuocere per 12-15 minuti.

WELCOME
Just a few lines to welcome all my new students at the Liceo Linguistico and Liceo Classico! I'm full of "great expectations"! (find where this quotation comes from...)
